Turkey or Roast Chicken: cooking tip

Thanksgiving has me thinking turkey... but actually with our beef allergy we cook a lot of chicken and turkey.
My best tip for cooking turkey and chicken is this.... rub it with olive oil. It keeps it very moist!!
